After a weekend of introducing a weekend visitor to all of Los Angeles' tastiest indulgences (Kogi, In-N-Out Burger, Superbowl Treats, just to name a few...) my body was yearning for some greens. For dinner tonight I decided to make a perfectly light yet satisfying kale salad with a dressing that would pack in the protein! An added bonus? All of the produce and nuts were grown in California!
Ingredients
Large bunch of Kale
1 Red Onion
1/4 cup Peanuts
Thai Dressing Ingredients
1/2 cup peanut butter
1 1/2 T Maple Syrup
2 tb low sodium soy sauce
2 tb brown rice vinegar
1/2 tsp. garlic, minced
1/2 tsp. ginger, minced
1/4 tsp. cayenne pepper
Pinch of salt
1. Blanch the Kale in boiling water for 3 minutes
3. Combine dressing ingredients in blender
3. Chop Red Onion into small garnished pieces
4. Roughly chop peanuts.
5. Combine all ingredients!
The perfect combination of Kale leaves and a dense nutritious dressing will leave you feeling full, but not overly stuffed.
