Quinoa Casserole

I know. It looks disgusting. But trust me on this one. It's good! A bowl full of vegan and once again local goodness. Not much else to say!

2 cups Quinoa
2 hand fulls Spinach
2 cups Steamed Cauliflower

Sauce Ingredients:
1/2 cup Nutritional Yeast
1/4 cup Tahini
1/2 tsp Tumeric
2 tbs Apple Cider Vinegar
1 Orange Pepper
1 Yellow Squash
1/2 tsp Sea Salt
2 cloves of Garlic
1 tsp Dried Rosemary

1. Boil 4 cups of water, then add 2 cups of quinoa. Leave on simmer for 15 minutes.
2. Preheat oven to 325
2. Using blender or food processor, blend all sauce ingredients.
4. Take deep casserole dish and add cooked Quinoa, then pour in "Cheese" Sauce
5. Top casserole with steamed cauliflower and spinach
6. Enjoy!
